Master Distiller Lauren has set sail on her maiden voyage  — from recipe to fermentation and distillation, she charted the course for production of this incredible rum. You hold the first spirit crafted from start to finish by one of the country’s few female master distillers. Already an accomplished and award-winning whiskey distiller, Lauren wanted to enter the world of craft rum, a small-but-growing segment of craft distilling.

“We’ve wanted to do this for a long time! I was really excited to expand our horizons and work with a non-grain based product. This is our first time fermenting something other than grains. According to Lauren, We are fans of rum and thought this product would be a great and fun compliment to our current lineup. Our rum shares much of the DNA of our whiskeys —  Blue Ridge Mountain water, column distillation, and choice yeast” 

What was the process like creating this product? 

“I picked the recipe, the process, for the first time I was able to set the agenda, chart the course of the fermentation, and the distillation. I have really wanted to create something to live up to the Silverback name. My mom and our team have set the bar so high for our whiskies and gin. I used those practices and methods that we have implemented and applied it to the rum. I think we have done something great here with the rum and it’s really exciting.” 

What can you expect from Silverback Rum? 

Just like the finest white rums in the world, Silverback rum is crystal clear like the crystal spy glasses used by clever sailors in crow’s nests atop the highest masts, shouting "Land, ho!" to their mates.

There are notes of cane sugar, sweet cream, and molasses just like the ones wafting up from the ship’s cargo hold. Swirling in the glass, a sailor might notice hints of ripe tropical fruit like banana, mango, and cherimoya, just like the ones found down in the galley. Aromatic notes of fresh grass, allspice and nutmeg give bold definition to this rum’s aroma.

The base for this rum is blackstrap molasses. The reason being is that the intensity of rum flavor is dependent on the proportion of cane solids. The more cane solids, the more intense the rum flavor. The team chose blackstrap molasses because it has a high concentration of cane solids, giving us a flavorful, full-bodied rum. Blackstrap is bitter and not considered preferable for human consumption, however it has a high concentration of cane solids and increases rum flavor. 

As for its palate, toffee, toasted sugar, chocolate, banana and spice make for a perfect match between tangy rum richness and fruity sweetness, which according to Lauren is “like my marriage to the sea: romantic, boundless and deep.”

And the finish? Clean and balanced. The fruity, sweet, aromatic and musky notes harmonize like the best sea shanty ballads to create an unforgettable spirit.
